Moong sprout with egg salad - Sandwich




Ingredients
Egg – 6
Vegetables like celery, carrot, bell pepper – 1½ cups,
Sprouts or any other micro greens – 1 cup
Whole grain bread – 8 slices
Mayonnaice - 2 to 3 tbsp
Mustard – ½ tsp
Onion - mediam size
Olive oil – 1 tbsp
Juice of half a lemon
Parsley or cilantro – 1 tbsp, minced
Red pepper flakes – 1 tsp
Salt

Method
Halve the hard boiled eggs, separating the yolks from the whites. Cut the whites and set aside.
In heated kadai add oil fry mustard seeds,onion, vegetables and the sprouts. Just few minutes not fully cook.
After its cool down add the remaining ingredients and mix well.

Spread the egg salad on toasted bread, followed by another slice of bread. 

Palak Egg Curry

Ingredients
3 boiled eggs
1 big bunch of spinach (discard the coarse stems) – blanch in hot water for 2 minutes, make a paste and keep aside
1 ½-2 tbsp ghee (clarified butter)
1 tsp cumin seeds
1 cinnamon stick
3 cloves
2 onions finely chopped
2 green chillis slit length wise
1 tsp ginger garlic paste
1 tsp red chilli pwd
1 tbsp coriander pwd
1 big juicy tomato (finely chopped, optional)
salt to taste
½ tsp garam masala pwd
1 tbsp malai (optional)

Method
Add ghee in a heavy bottomed vessel and add cinnamon stick,cloves and cumin seeds, let them splutter. Add the onions and green chillis, sauté them till light brown.Add ginger garlic paste and fry further for 2 minutes. Add red chilli powder and coriander powder and combine well.Add the tomato and let it cook for 5-6 minutes on medium heat. Add the palak paste and let it cook further for another 4-5 minutes.
Now add the egg pieces and combine. Cook covered on low heat for 3 minutes. You can add some water if you want then add salt and cook on medium heat for 6-8 minutes.
Add malai, garam masala powder and mix well.
Reduce flame, cover and cook for 2 minutes.
Serve hot with rotis or white steamed rice.



Note: for Palak paneer use panner instead of egg.

Vegetable Fried Rice & Egg fried rice


Ingredients
3 cups of cooked rice (I used basmati rice)
3-4 tbsps of cooking oil
1 medium onion chopped
2 cups of mixed vegetables diced (carrots, green peas, french beans,capsicum or any other veggies of your choice. I parboil veggies like carrots, green peas, potatoes before frying)
1 tsp ginger & garlic paste
½ tsp red chilli powder
½ tsp white pepper powder (adjust)
1 tsp kasuri methi leaves crushed
a pinch of ajinomoto (optional)
2 tsp soya sauce
Salt to taste
Spring onions for garnish


Veg fried rice

In a wok, heat oil to smoking point and throw in the chopped onions. Saute them for about 2-3 minutes on medium heat.
Now throw in the diced vegetables, add salt and fry on high heat for another 2-3 minutes stirring frequently. Do not over cook the vegetables. Just cook them till tender.
Add ginger & garlic paste and sauté for another 2 mts. Add red chilli powder, white pepper powder, crushed kasuri methi leaves, and saute for a minute. Add ajinomoto and soya sauce, and saute for a minute.
Now throw in the cooked rice, and mix well with all the vegetables. Adjust salt. Continue to fry on high flame for another 3-4 minutes. Just before switching off the flame, add chopped spring onions.
Serve hot.


Egg fried rice
Make one omelet your choice cut in to slices and arrange over the rice. Otherwise fry 2 nos egg and mix it with rice.
